Vegetable Khichdi

A comforting and wholesome one-pot meal made with lentils, brown rice, and mixed vegetables. Perfect for a quick, nutritious lunch.

Ingredients:

  • ¼ cup mixed lentils (moong dal, masoor dal)

  • ½ cup cooked rice

  • 1 cup mixed vegetables (carrot, peas, beans), chopped

  • 1 tsp ghee or olive oil

  • ½ tsp cumin seeds

  • 1 small onion, finely chopped

  • 1 clove garlic, minced

  • ¼ tsp turmeric powder

  • ¼ tsp cumin powder

  • Salt to taste

  • Fresh coriander for garnish

Instructions:

  1. Heat ghee or olive oil in a pressure cooker. Add cumin seeds and let them splutter.

  2. Add chopped onions and minced garlic, sauté until onions turn golden.

  3. Add chopped vegetables, turmeric powder, and cumin powder. Sauté for 2 minutes.

  4. Add washed & soaked lentils and cooked rice. Mix well and add 1 cup of water.

  5. Close the lid and cook for 2 whistles on medium heat.

  6. Let the pressure release naturally. Open the lid and stir gently.

  7. Serve hot, garnished with fresh coriander leaves.
