Vegetable Khichdi
A comforting and wholesome one-pot meal made with lentils, brown rice, and mixed vegetables. Perfect for a quick, nutritious lunch.

Ingredients:
¼ cup mixed lentils (moong dal, masoor dal)
½ cup cooked rice
1 cup mixed vegetables (carrot, peas, beans), chopped
1 tsp ghee or olive oil
½ tsp cumin seeds
1 small onion, finely chopped
1 clove garlic, minced
¼ tsp turmeric powder
¼ tsp cumin powder
Salt to taste
Fresh coriander for garnish
Instructions:
Heat ghee or olive oil in a pressure cooker. Add cumin seeds and let them splutter.
Add chopped onions and minced garlic, sauté until onions turn golden.
Add chopped vegetables, turmeric powder, and cumin powder. Sauté for 2 minutes.
Add washed & soaked lentils and cooked rice. Mix well and add 1 cup of water.
Close the lid and cook for 2 whistles on medium heat.
Let the pressure release naturally. Open the lid and stir gently.
Serve hot, garnished with fresh coriander leaves.
