Chicken & Vegetable Soup

Ingredients:

  • 1 boneless, skinless chicken breast (120g)

  • 1 medium carrot, diced

  • 1/2 cup zucchini, diced

  • 1/2 cup celery, chopped

  • 1/4 cup onion, diced

  • 2 garlic cloves, minced

  • 3 cups chicken broth (low-sodium)

  • 1/2 tsp dried thyme

  • Salt and pepper to taste

  • 1 tbsp olive oil

Directions:

  1. Heat olive oil in a large pot over medium heat. Add the garlic, onion, carrot, zucchini, and celery, sauté for 5 minutes.

  2. Add chicken broth, dried thyme, salt, and pepper. Bring to a boil.

  3. Reduce heat and add the chicken breast. Simmer for 15-20 minutes until the chicken is cooked through.

  4. Remove chicken, shred it, and return it to the soup. Stir to combine.

  5. Serve hot.
