Chicken & Vegetable Soup
Ingredients:
1 boneless, skinless chicken breast (120g)
1 medium carrot, diced
1/2 cup zucchini, diced
1/2 cup celery, chopped
1/4 cup onion, diced
2 garlic cloves, minced
3 cups chicken broth (low-sodium)
1/2 tsp dried thyme
Salt and pepper to taste
1 tbsp olive oil
Directions:
Heat olive oil in a large pot over medium heat. Add the garlic, onion, carrot, zucchini, and celery, sauté for 5 minutes.
Add chicken broth, dried thyme, salt, and pepper. Bring to a boil.
Reduce heat and add the chicken breast. Simmer for 15-20 minutes until the chicken is cooked through.
Remove chicken, shred it, and return it to the soup. Stir to combine.
Serve hot.
