Tofu & Mushroom Soup

Ingredients:

  • 1/2 block firm tofu (about 150g), cubed

  • 1 cup sliced mushrooms (shiitake or button)

  • 2 cups vegetable broth (low-sodium)

  • 1 tbsp soy sauce (low-sodium)

  • 1/2 tsp ginger (fresh, grated)

  • 2 garlic cloves, minced

  • 1/2 tsp sesame oil

  • 1 green onion, chopped (for garnish)

  • Salt and pepper to taste

Directions:

  1. Heat sesame oil in a pot over medium heat. Add garlic, ginger, and mushrooms. Sauté for 5 minutes.

  2. Add vegetable broth and soy sauce, bring to a boil.

  3. Lower heat and add tofu cubes. Simmer for 10 minutes.

  4. Season with salt and pepper.

  5. Garnish with chopped green onion and serve.
