Tofu & Mushroom Soup
Ingredients:
1/2 block firm tofu (about 150g), cubed
1 cup sliced mushrooms (shiitake or button)
2 cups vegetable broth (low-sodium)
1 tbsp soy sauce (low-sodium)
1/2 tsp ginger (fresh, grated)
2 garlic cloves, minced
1/2 tsp sesame oil
1 green onion, chopped (for garnish)
Salt and pepper to taste
Directions:
Heat sesame oil in a pot over medium heat. Add garlic, ginger, and mushrooms. Sauté for 5 minutes.
Add vegetable broth and soy sauce, bring to a boil.
Lower heat and add tofu cubes. Simmer for 10 minutes.
Season with salt and pepper.
Garnish with chopped green onion and serve.
