Egg Vegetable Fried Rice

Ingredients:

  • 1 ½ tsp ghee (melted)

  • 1 tsp ginger garlic paste (optional)

  • 2 large eggs (increased for more protein)

  • 50g or ½ cup chopped onion

  • 40g or ½ cup grated carrot

  • 40g or ½ cup finely chopped beans

  • 100g or 1 cup chopped cabbage

  • 100g or ½ cup cooked basmati rice

  • Salt & pepper to taste

Instructions:

  1. Scramble the 2 eggs separately and set them aside.

  2. In a wok, heat 1 tsp of ghee, add the chopped onions, and sauté until translucent, adding salt to season at this stage.

  3. Add grated carrots, chopped beans, and cabbage. Stir-fry until the vegetables are tender.

  4. Add the scrambled eggs to the wok and mix well.

  5. Add pepper to taste.

  6. Add the cooked rice to the wok and toss everything together. Cook for an additional minute.
