Chicken Vegetable Fried Rice
This Chicken Vegetable Fried Rice recipe is a nutritious and guilt-free option for rice lovers. By increasing the protein and making a few adjustments, we now have a filling, high-protein meal with approximately 400 kcal per serving, perfect for those who want to stay full and energized throughout the day.
Ingredients:
1 ½ tsp ghee (melted)
1 tsp ginger garlic paste (optional)
1 large egg
150g chicken breast (increased for more protein)
50g or ½ cup chopped onion
40g or ½ cup grated carrot
40g or ½ cup finely chopped beans
100g or 1 cup chopped cabbage
100g or ½ cup cooked basmati rice
Salt & pepper to taste
Instructions:
Cut the chicken breast into small pieces.
In a wok or pan, heat 1 tsp of ghee, add ginger garlic paste (optional), and cook the chicken breast with salt and pepper (or 1 tsp of tandoori masala for extra flavor). Cook for 5 minutes, ensuring the water from the chicken evaporates, then remove it in a bowl.
Scramble the egg separately and set it aside.
In the same wok, add ½ tsp of ghee and sauté chopped onions until translucent, adding salt at this stage to season.
Add grated carrot, chopped beans, and cabbage to the wok. Stir-fry until the vegetables are tender.
Add the scrambled egg and cooked chicken back into the wok.
Season with salt and pepper to taste.
Add the cooked rice to the wok and toss everything together. Cook for another minute.
