Vegetable Fried Rice

Ingredients:

  • 1 tsp ghee (melted)

  • ¼ tsp ginger garlic paste (or finely chopped, optional for extra zing)

  • 150g boiled green peas (to boost protein)

  • 40g (¼ cup) chopped onion

  • 50g (½ cup) grated carrot (to increase fiber)

  • 50g (½ cup) finely chopped beans

  • 100g (½ cup) chopped cabbage

  • 100g (½ cup) cooked basmati rice

  • Salt & pepper to taste

Instructions:

  1. In a wok, heat ½ tsp of ghee and sauté the chopped onions until translucent (adding salt at this time helps).

  2. Add the ginger garlic paste and cook for 1 minute.

  3. Add the grated carrot, chopped beans, and cabbage, then stir fry for 2-3 minutes until the vegetables are tender.

  4. Add the boiled green peas and stir to combine.

  5. Season with pepper to taste.

  6. Add the cooked basmati rice to the wok and toss well, mixing all the ingredients.

  7. Cook for another minute, ensuring everything is heated through.

  8. Your simple, quick, and wholesome vegetable fried rice is ready to serve.
