Palak Paneer with Brown Rice

Ingredients:
100g paneer, cubed
1 cup spinach leaves, blanched and pureed
1 tsp olive oil
½ medium onion, finely chopped
1 garlic clove, minced
½ cup cooked brown rice
½ tsp cumin powder
Salt and pepper to taste
1 tbsp low-fat yogurt
Instructions:
Heat olive oil in a pan. Add minced garlic and chopped onions. Sauté until golden brown.
Add spinach puree, cumin powder, and cook for 2-3 minutes.
Add paneer cubes, salt, and pepper. Stir well and simmer for 5 minutes.
Mix in yogurt, stir well, and serve with cooked brown rice.
