Palak Paneer with Brown Rice

Ingredients:

  • 100g paneer, cubed

  • 1 cup spinach leaves, blanched and pureed

  • 1 tsp olive oil

  • ½ medium onion, finely chopped

  • 1 garlic clove, minced

  • ½ cup cooked brown rice

  • ½ tsp cumin powder

  • Salt and pepper to taste

  • 1 tbsp low-fat yogurt

Instructions:

  1. Heat olive oil in a pan. Add minced garlic and chopped onions. Sauté until golden brown.

  2. Add spinach puree, cumin powder, and cook for 2-3 minutes.

  3. Add paneer cubes, salt, and pepper. Stir well and simmer for 5 minutes.

  4. Mix in yogurt, stir well, and serve with cooked brown rice.
