Rajma Curry with Quinoa

Ingredients:

  • 1 cup cooked kidney beans (rajma)

  • ½ medium onion, chopped

  • 1 medium tomato, pureed

  • ½ tsp ginger-garlic paste

  • ½ cup cooked quinoa

  • 1 tsp olive oil

  • ½ tsp cumin seeds

  • ½ tsp coriander powder

  • ½ tsp garam masala

  • Salt to taste

Instructions:

  1. Heat olive oil in a pan. Add cumin seeds and let them crackle.

  2. Add ginger-garlic paste and sauté for a minute.

  3. Add chopped onions and cook until golden brown. Mix in tomato puree, coriander powder, and garam masala.

  4. Add cooked rajma, salt, and a bit of water. Simmer for 10 minutes.

  5. Serve hot with cooked quinoa.
