Rajma Curry with Quinoa

Ingredients:
1 cup cooked kidney beans (rajma)
½ medium onion, chopped
1 medium tomato, pureed
½ tsp ginger-garlic paste
½ cup cooked quinoa
1 tsp olive oil
½ tsp cumin seeds
½ tsp coriander powder
½ tsp garam masala
Salt to taste
Instructions:
Heat olive oil in a pan. Add cumin seeds and let them crackle.
Add ginger-garlic paste and sauté for a minute.
Add chopped onions and cook until golden brown. Mix in tomato puree, coriander powder, and garam masala.
Add cooked rajma, salt, and a bit of water. Simmer for 10 minutes.
Serve hot with cooked quinoa.
