Ingredients:

  • ¼ cup black beans (canned, drained)

  • ¼ cup corn kernels

  • ¼ avocado, diced

  • ¼ cup diced tomatoes

  • 1 tsp olive oil

  • Salt and pepper to taste

Instructions:

  1. In a bowl, layer quinoa, black beans, corn, tomatoes, and avocado.

  2. Drizzle with olive oil and salsa, then mix gently.

  3. Season with salt and pepper before serving.
