Chicken & Cabbage Soup

Ingredients:

  • 100g cooked chicken breast, shredded

  • 2 cups cabbage, chopped

  • 1/2 onion, chopped

  • 1 garlic clove, minced

  • 1/4 chicken stock cube

  • 1/2 tsp turmeric

  • Salt and pepper to taste

  • 1 tsp olive oil

  • 2 cups water

Directions:

  1. Heat olive oil in a pot, sauté onion and garlic until soft.

  2. Add cabbage and cook for 5 minutes.

  3. Add chicken, stock, turmeric, salt, pepper and water. Bring to a boil.

  4. Simmer for 10 minutes, or until cabbage is tender.

  5. Serve hot.
