Lentil & Tomato Soup

Ingredients:

  • 1 cup red lentils

  • 2 diced tomatoes

  • 1/2 onion, chopped

  • 1 garlic clove, minced

  • 2 cups vegetable broth (low-sodium)/ 1/4 cube Vegetable Stock

  • 1/2 tsp cumin

  • Salt and pepper to taste

  • 1 tsp olive oil

Directions:

  1. Heat olive oil in a pot, sauté onion and garlic until soft.

  2. Add lentils, tomatoes, vegetable broth, cumin, salt, and pepper. Bring to a boil.

  3. Lower heat and simmer for 25-30 minutes, or until lentils are soft.

  4. Serve hot.
