Lentil & Tomato Soup
Ingredients:
1 cup red lentils
2 diced tomatoes
1/2 onion, chopped
1 garlic clove, minced
2 cups vegetable broth (low-sodium)/ 1/4 cube Vegetable Stock
1/2 tsp cumin
Salt and pepper to taste
1 tsp olive oil
Directions:
Heat olive oil in a pot, sauté onion and garlic until soft.
Add lentils, tomatoes, vegetable broth, cumin, salt, and pepper. Bring to a boil.
Lower heat and simmer for 25-30 minutes, or until lentils are soft.
Serve hot.
