Chicken & Mushroom Soup

Ingredients:

  • 100g cooked chicken breast, shredded

  • 1 cup mushrooms, sliced

  • 1/2 onion, chopped

  • 2 cups chicken broth (low-sodium)/ 1/4 stock cube with 2 cups water

  • spices of your choice

  • Salt and pepper to taste

  • 1 tsp olive oil

Directions:

  1. Heat olive oil in a pot, sauté onion and mushrooms until soft.

  2. Add chicken, broth, spices, salt, and pepper. Bring to a boil.

  3. Simmer for 10 minutes, or until mushrooms are tender.

  4. Serve hot.
