Palak (Spinach) & Paneer Soup

Ingredients:

  • 100g paneer, cubed

  • 1 cup spinach (palak), chopped

  • 1/2 onion, chopped

  • 1 garlic clove, minced

  • 1/2 inch ginger, minced

  • 2 cups vegetable broth (low-sodium)

  • 1/2 tsp cumin powder

  • 1/2 tsp garam masala

  • Salt to taste

  • 1 tsp ghee or olive oil

Directions:

  1. Heat ghee in a pot, sauté onion, garlic, and ginger until fragrant.

  2. Add spinach and cook until wilted.

  3. Add vegetable broth, cumin powder, garam masala, salt, and paneer. Bring to a boil.

  4. Simmer for 10 minutes.

  5. Serve hot.
