Palak (Spinach) & Paneer Soup
Ingredients:
100g paneer, cubed
1 cup spinach (palak), chopped
1/2 onion, chopped
1 garlic clove, minced
1/2 inch ginger, minced
2 cups vegetable broth (low-sodium)
1/2 tsp cumin powder
1/2 tsp garam masala
Salt to taste
1 tsp ghee or olive oil
Directions:
Heat ghee in a pot, sauté onion, garlic, and ginger until fragrant.
Add spinach and cook until wilted.
Add vegetable broth, cumin powder, garam masala, salt, and paneer. Bring to a boil.
Simmer for 10 minutes.
Serve hot.
