CHICKEN & Sweet Potato Soup

Ingredients:

  • 100g ground chicken breast

  • 1 medium sweet potato, peeled and diced

  • 1/2 onion, chopped

  • 2 garlic cloves, minced

  • 1/4 chicken stock cube

  • 1/2 tsp paprika

  • 1/2 tsp ground cumin

  • Salt and pepper to taste

  • 1 tsp olive oil

  • 2 cups water

Directions:

  1. Heat olive oil in a large pot, sauté onion and garlic until soft.

  2. Add ground chicken and cook until browned.

  3. Add sweet potato, stock, paprika, cumin, salt, pepper and water. Bring to a boil.

  4. Lower heat and simmer for 25-30 minutes, until sweet potatoes are tender.

  5. Serve hot.
