CHICKEN & Sweet Potato Soup
Ingredients:
100g ground chicken breast
1 medium sweet potato, peeled and diced
1/2 onion, chopped
2 garlic cloves, minced
1/4 chicken stock cube
1/2 tsp paprika
1/2 tsp ground cumin
Salt and pepper to taste
1 tsp olive oil
2 cups water
Directions:
Heat olive oil in a large pot, sauté onion and garlic until soft.
Add ground chicken and cook until browned.
Add sweet potato, stock, paprika, cumin, salt, pepper and water. Bring to a boil.
Lower heat and simmer for 25-30 minutes, until sweet potatoes are tender.
Serve hot.
